Why is 'gouda' not an acceptable word?

Gouda is a type of cheese and I realize it's called gouda because it comes from the region of Gouda, however, it's not considered a proper noun, just as champagne is called champagne after the region it's from, but is acceptable.

You will need to contact Zynga directly at support.zynga.com. They have control over the word list.
